Gluten-free Bacon and Avocado Grilled Cheese

  1. Cook 2 slices of bacon until desired crispness (I cook bacon in the oven at 330 degrees for approx. 8 mins per side) Set aside to cool. Heat the butter in a small frying pan until hot and bubbly.
  2. While the bacon is cooking, prepare the rest of your sandwich; slice the avocado in half. Save half for another meal and thinly slice the remaining half. Take one slice of cheese and lay it on the bread. Add the sliced avocado on top of the cheese.
  3. When the bacon is done, heat up the butter in a small frying pan until it’s bubbling.
  4. Add the bacon on top of the sliced avocado, and add your second slice of cheese on top of the bacon. Cover with the second slice of bread.
  5. Add sandwich to the pan and let is cook. Push down with a spatula. Check underside at the 2-minute mark and keep checking – you don’t want to burn this delight!
  6. Once the underside is browned, carefully flip the sandwich over to cook the other side. Press down with the spatula to get the cheese to melt and help stick the sandwich together.
  7. Once that side is browned, you are done! YUM! Slice and eat!

Grass-fed cheese can be found at Whole Foods and Trader Joe’s – look for local cheeses that have the grass-fed label, or you can try Organic Valley¬†or Kerrygold. Kerrygold makes grass-fed butter too.
