Ladies and Gentlemen, it is HOT! As summer cranks up its heat, I am always looking to find ways to cool off. Sometimes the air conditioning and swimming pools and beaches do the trick, but I always come back to one sure-fire way to chill:

Making homemade ice cream!


I work out hard. I eat clean. I sleep well. I am getting better and better at meditating to relax. I read and learn everyday and then pass on all the good stuff to you!  So today, after some DELICIOUS experimentation, I pass on this AWESOME ice cream recipe to you!! In this heat, we ALL deserve some quality ice cream!  I do not believe that ANYONE should punish themselves for having it. If you are trying to lose weight, eating a bowl of homemade LOVE is not going to make you fatter. It will make you happy. Have it, love it, and keep on with your workouts. There are foods out there that exist purely for enjoyment. Ice cream has always topped my list.

I always choose homemade over store-bought for obvious reasons, namely CHEMICALS and PRESERVATIVES.  I don’t like eating things that I can’t pronounce, nor do I understand why wheat would even make its way into ice cream, not to mention junk like canola oil and high fructose corn syrup. Most ice creams are not even called “ice cream” anymore – have you noticed this? On many popular store-bought brands, I’ve seen labels like “Frozen dairy dessert product.” Whaaa? My guess is that the labels changed because what exists inside those colorful cartons does not resemble natural ice cream AT ALL. One look at the expansive and disgusting ingredient lists will easily confirm that. Ick! As with any other foods, just make it yourself if you want quality.

I LOVE PUMPKIN. LOVE IT!!! For all you pumpkin fans out there, have I got a recipe for you! I found it in one of my Favorite recipe books, “Make it Paleo” by Bill Staley & Hayley Mason. The recipe I am sharing with you is dairy-free, so hopefully this aspect will appeal to many who have opted out of dairy due to health issues and allergies.

Since it is homemade, you will need an ice cream maker. If you do not have one, borrow one from a friend or seriously consider purchasing one –you will not regret it if you love ice cream & you want to be able to control what is in your ice cream! I have this one. 





1 can coconut milk (16oz)

3 egg yolks

½ cup pureed pure pumpkin

¼ cup pure maple syrup

1 tsp vanilla extract

½ tbsp pumpkin pie spice


1)      Combine all ingredients in a sauce pan.

2)      Bring to a low boil while whisking.

3)      Remove from heat and let cool.

4)      Strain mixture into a medium mixing bowl and cover with plastic wrap

5)      Chill mixture in refrigerator for 2 hours.

6)      Place mixture in an ice cream maker and run until the desired consistency is reached.

7)      Serve with sprinkled cinnamon and chopped pecans.

Prep Time: 2.5 hours

Cook time: 10 minutes

Makes: 1 Pint
